| Vegetable Hash Browns
1/2 head of fresh cauliflower, chopped 1/4 green bell pepper, minced 1 tablespoon of onion, minced 1 tablespoon of butter 1 tablespoon of cooking oil
In a heavy skillet, melt butter on medium/high heat. Add remaining ingredients before butter starts to burn. Stir well to coat vegetables. Cook, uncovered, for 6 -8 minutes. Stir frequently, allowing vegetables to lightly brown. Serves 2. |
