| Smoked Brisket

Soak wood chips in water for at least 30 minutes. Prepare charcoal fire in smoker; let burn 15 to 20 minutes. Combine rosemary and next 4 ingredients; rub on brisket. Drain wood chips, and place on coals. Place water pan in smoker; add water to depth of fill line. Place brisket on lower food rack; cover with smoker lid. Cook 3 hours and 30 minutes or until meat thermometer inserted into thickest portion registers 155ºF. Slice and serve with barbecue sauce, buns, and pickles. Garnish, if desired. Smoked Brisket 2
Select choice 4 to 8 lb. brisket Cajun seasoning Garlic seasoning Meat tenderizer 2 tablespoons of pure honey Parsley flakes 1 cup of picante sauce 1 cup of chopped onion 1 cup of chopped green bell pepper 3 slices of bacon 3 cups of barbecue sauce 10 pounds of Charcoal & Hickory chips
Sprinkle brisket with a lite coat of Cajun seasoning. Garlic seasoning, meat tenderizer and parsley flakes. Lay 3 strips of bacon on the most lean part of the meat. Place 10 pounds of charcoal in the Cajun cooker "Smoker". Light charcoal with a match, allow come up to a glow "no flames", place the Hickory chips on top of hot charcoal. "For added smoke, use additional wood chips." Fill the water pan, place inside cooker. Place brisket in the Cajun cooker at 220ºF. or medium ideal temperature. Allow 4 1/2 hours cooking time. Mix 3 cups of barbecue sauce, 2 tablespoons of pure honey, 1 cup chopped onions, 1 cup of chopped green bell peppers, 1 cup of picante sauce and 3 cups of water in a saucepan. Place on medium heat until it comes to a boil, remove it and allow it to set for approximately 15 minutes. Remove brisket from the Cajun cooker and place it in a roasting pan. Pour sauce mix over the brisket, cover it and place it in the oven. Preheated to 375ºF. Allow at least 3 1/2 hours of cooking time in the oven. Remove, slice and serve. Use the excess sauce as desired.
