Bourbon Balls 2

2 cups of vanilla wafer crumbs
2 tablespoons of cocoa
2 1/2 cups of confectioners' sugar
1 cup of finely chopped pecans
2 tablespoons of white corn syrup
1/4 cup of bourbon

Mix the wafer crumbs, cocoa, and 2 cups of confectioners' sugar together in a bowl. Add the chopped pecans. Stir in the corn syrup and bourbon, mix well. Dust your hands with a little superfine sugar, roll dough into 1 inch balls. Roll each ball in the remaining confectioners' sugar until well coated. Store bourbon balls between layers of waxed paper in refrigerator or in a sealed metal container for at least 12 hours before serving. They can be stored for several weeks in a closed tin. Makes 3 dozen
