Low Fat Brownies

1 cup of all-purpose flour
2/3 cup of sugar
1/4 cup of cocoa
2 tablespoons of cornstarch
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 egg whites, lightly beaten
1/2 cup of evaporated skim milk
1/2 cup of unsweetened applesauce
1/3 cup of corn syrup
1 teaspoon of vanilla

Icing, Optional

1 cup of powdered sugar
1 tablespoon of cocoa
1/2 teaspoon of vanilla
1 tablespoon of skim milk

In medium bowl mix together first 7 ingredients. In a separate bowl stir together the egg whites, evaporated skim milk, applesauce, corn syrup and vanilla. Add the dry mixture to wet and stir until just blended. Heat oven to 350ºF. Spray 8 x 8 inch pan with cooking spray. Pour batter into prepared pan. Bake 30 to 35 minutes or until done. Remove from oven and cool on wire rack. Prepare icing - blend all ingredients in medium bowl and whisk until smooth. Spread on brownies.
