Christmas Cookies 1

1 cup of butter
2/3 cup of sugar
2 large eggs, well beaten
1 1/2 cups of all purpose flour, sifted
1 teaspoon of vanilla extract

Preheat your oven to 375ºF. Cream the butter until light, then slowly add the sugar, beating until very light and fluffy. Add the well beaten eggs and vanilla. Pour on your flour and blend well. Drop the mixture by the teaspoonful onto a well greased baking sheet and spread thinly with a knife, dipped into cold water, or put it into a cookie gun. Bake in the oven until the edges are brown, about 8 minutes for each batch. Remove the cookies from the baking sheet as soon as they are done and cool on wire racks. You can decorate with blanched raisins, nuts or candy sprinkles before they go into the oven.
