Roasted Red Pepper Sauce Over Tortellini

One 9 ounce package of cheese filled tortellini or refrigerated meat
One 12 ounce jar of roasted red sweet peppers, drained
1/2 cup of chopped onion
3 cloves garlic, minced
1 tablespoon of butter or margarine
2 teaspoons of snipped fresh thyme or 1/2 teaspoon of dried thyme, crushed
2 teaspoons of snipped fresh oregano or 1/4 teaspoon of dried oregano, crushed
1 teaspoon of sugar

Cook the tortellini according to the package directions. drain, and keep warm. Meanwhile, place the roasted sweet potatoes in a food processor bowl or blender container. Cover and process or blend until smooth. Set aside. For the sauce: In a medium saucepan cook the onion and garlic in butter or margarine until tender. Add the pureed roasted peppers, thyme, oregano and sugar. Cook and stir until heated through. Pour the sauce over the tortellini. Toss to coat. Makes 3 servings
