Cheddar Cheese Dip

2 tablespoons of olive oil
1 pound of sharp Cheddar cheese, shredded
1 cup of sour cream
1 egg, beaten
1 teaspoon of dry mustard
1 teaspoon of paprika

Place the olive oil in top of a double broiler and add the cheese. Place over simmering water and stir until the cheese begins to melt. Add the sour cream gradually, stirring constantly until the cheese is melted and the mixture is smooth. Stir in the egg, mustard and paprika. Serve at once, while still warm with celery, green peppers, mushrooms, cucumbers, or raw or lightly steamed green beans or cauliflower. Serves 6 to 8
