| Low Carb Corned Beef & Cabbage
5 pounds of beef brisket 3 whole cloves 1/4 onion 1/4 cup of bell pepper 3 garlic cloves 1/2 cup of rosemary 1 cup of celery 3 sprigs of parsley 6 black peppercorns 2 bay leaves 1 head of cabbage
Place brisket in a large pot, cover with cold water and bring to a boil. When beef comes to a boil, drain and replace with fresh water and add garni bag. To form garni bag, place onion, cloves, garlic, peppers, celery, rosemary, parsley, peppercorns, and bay leaves in a cloth and tie with a string. Bring to a boil. Reduce heat to a simmer for approximately 5 hours. During last 30 minutes of cooking, add cabbage in wedges. Remove beef and cabbages to a plate and serve. Serves 8.
