| Low Carb Shish Kebabs
2 pounds of beef or lamb stew meat, cut into 2 inch chunks 1/4 cup of olive oil 1/4 cup of red wine 1/4 teaspoon of lemon extract 1 clove of garlic, minced 2 teaspoons of ginger root, minced very fine 1 teaspoon of onion salt 1/2 teaspoon of black pepper 1/4 teaspoon of cayenne pepper 1 teaspoon of curry powder 1 teaspoon of tumeric 1 teaspoon of coriander, ground 1/2 red onion, sliced into squares 1 sweet green pepper, seeded and sliced into squares 1 red or yellow bell pepper, seeded and sliced into squares 12 large mushrooms 6 skewers
Blend olive oil with wine and lemon extract. Stir in ginger, garlic, and spices. Place meat chunks in marinade and coat well. Marinate overnight, turning pieces occasionally. Thread meat and vegetables onto skewers. Grill over hot coals until everything is well browned (usually 3 minutes per side). Serves 6. |
