Tomato and Corn Salsa
Salsa de Jitomate y Elote

 3 ripe tomatoes, 2 red and 1 yellow
1 cup of cooked white or yellow corn kernels
1/2 medium red bell pepper, finely diced
1 guero (yellow) chile, seeded and finely chopped
1 tablespoon of chopped fresh mint
1 tablespoon of fresh lime juice
2 teaspoons of olive oil
1/2 teaspoon of cumin
1/2 teaspoon of salt, more or less for taste 

Mix all of the ingredients in a large bowl. Serve within 4 hours, cold or at room temperature. Makes 3 cups
