| Crisp Green Tomato Pickle Slices
7 pounds of very green tomatoes, sliced 1/4" 2 cups of slacked lime 2 gallons of water
Soak sliced tomatoes in lime water over night. Handle as little as possible. Wash in clear water, and soak 3 hours in clear water.
Make a mixture of: 2 quarts of vinegar 4 1/2 pounds of sugar 1 teaspoon of allspice 1 teaspoon of pickling spice 1 teaspoon of cloves 1 teaspoon of salt 1 teaspoon of celery seed
Gently boil tomato slices in this mixture, using an enamel pot, for 35 minutes. A few drops of green food coloring may be added, if desired, while cooking. Stack whole slices in sterile jars while hot and seal. 8 pints |
