| Au Gratin Potatoes
2 1/2 tablespoons of butter 2 tablespoons of flour 1/2 teaspoons of salt Dash of pepper 3/4 cup of shredded cheese 1 cup of milk 2 cups of diced, cooked potatoes 1/4 cup of dry bread crumbs |

Melt 2 tablespoons butter, blend in flour, salt and pepper. Gradually stir in milk. Cook until thick, stirring constantly. Remove from heat. Stir in cheese. Layer half the potatoes in greased 1-quart casserole, add half the cheese sauce. Repeat layers. Melt 1/2 tablespoon butter. Stir in bread crumbs. Bake at 350ºF. for 30 minutes. |
