| Cheese Scalloped Potatoes
1 1/2 cups of chicken or beef broth 6 medium potatoes, about 2 lbs., peeled and sliced 1/4 teaspoon of freshly ground black pepper 1 teaspoon of seasoned salt 1 cup of grated Swiss cheese, lightly packed 3 tablespoons of grated Parmesan cheese
Heat broth in large saucepan. Add potatoes, pepper and seasoned salt. Heat to boiling, simmer for 5 minutes. Do not drain. Layer potato mixture and Swiss cheese in 1 1/2 quart baking dish. Bake covered at 350ºF. for 1 hour. Uncover, sprinkle with Parmesan cheese and continue baking until top is golden and potatoes are tender. Makes 8 servings |
