Cornish Hens with Orange Sauce

2 Cornish hens
Salt
2 tablespoons of melted butter
1/3 cup of orange marmalade

Rinse hens. Rub salt inside cavity or over outside. Place in shallow baking pan and tie legs. Brush with melted butter. Bake at 350ºF. for one hour - until golden brown and almost done. Brush generously with orange marmalade and bake 10 more minutes.

CREAMY ORANGE SAUCE

2 tablespoons of butter
2 tablespoons of flour
1/4 teaspoon of ground ginger
1 cup of milk
1/3 cup of orange marmalade

Melt butter in saucepan. Stir in flour and ginger. Add milk gradually. Cook over medium heat until just boiled and thickened. Stir in marmalade and serve with game hens and rice pilaf. Serves 2-4.
