Are you ready for some good homecookin"?

 

Barbecued Gobbler

1 (about 8 lb.) turkey, ready to cook
Salt and pepper
2 1/2 teaspoons of liquid smoke, if desired
Celery leaves from
1 bunch of celery
2 onions, coarsely chopped
1/2 to 3/4 cup of salad oil
1 recipe Barbecue Sauce (recipe below)

Rub cavity with salt. Brush with 1 1/2 teaspoons liquid smoke. Stuff with celery leaves and onion. Truss bird. Add 1 teaspoon liquid smoke to salad oil; brush on bird. Sprinkle with salt and pepper. Place on grill over medium heat for 3 1/2 hours, until tender. Brush with cooking oil mixture several times. Add barbecue sauce (your favorite one) to oil mixture that remains. Baste turkey with this mixture the last 30 minutes of grilling time.
BARBECUE SAUCE:

1 cup of catsup
1 tablespoon of  Worcestershire sauce
1 cup of water
1/4 cup of  vinegar
2 or 3 dashes Tabasco sauce
1 tablespoon of  sugar
1 teaspoon of salt
