| Island Fried Rice
3 cups of cooked cold rice 3 tablespoons of oil 1 cup of cooked chicken, shrimp or leftover meat 2 eggs, slightly beaten 3/4 teaspoons of salt 1/2 teaspoons of pepper 1/2 cup of sugar 2 tablespoons of soy sauce 2 tablespoons of green onions, chopped |

Heat oil in deep frying pan. Add meat or chicken and cook 1 minute. Add eggs, salt and pepper. Cook, stirring constantly until well mixed. Add rice and soy sauce and cool, stirring constantly. Sprinkle sugar and stir for about 5 minutes, until rice is thoroughly heated. Garnish with green onions. 4 to 6 servings. |
