Mandarin Orange & Wild Rice Salad

Three 6 ounce boxes of long grain & wild rice, uncooked
1 cup of watercress and or fresh chopped spinach
3 oranges, peeled, sectioned and cut in half
6 scallions chopped
1 cup of snow peas, cut on the diagonal
1 cup of sliced toasted almonds

Salad Dressing:

1/2 cup of lemon juice or rice vinegar
1/3 cup of minced green onion
1/4 cup of peanut oil
2 tablespoons of dark sesame oil
1 tablespoon of soy sauce
1/2 teaspoon of hot pepper sauce
1/4 teaspoon of salt
1/2 teaspoon of sugar

Cook the rice according to the package directions. Cool. Combine the dressing ingredients and pour over the rice. Add watercress, spinach, snow peas, green onions and orange sections or drained canned oranges. Mix well and refrigerate for  at least 2 hours to let the ingredients combine the flavors. Spoon onto a bed of lettuce and sprinkle with toasted almonds on top. Decorate with sliced orange juices
