Fruity Chicken Salad Sandwiches

2 cups of chopped chicken breast
1 small Red Delicious or Granny Smith apple, cored and chopped
1/3 cup of sliced celery
1/4 cup of raisins
1 green onion, thinly sliced
1/4 cup of plain fat free yogurt
1/4 cup of reduced calorie ranch salad dressing
Red Tipped leaf lettuce
8 slices of whole wheat or other bread

In a large mixing bowl stir together the chicken, apple, celery, raisins and green onion. In a small bowl combine the yogurt and ranch salad dressing. Pour over the chicken mixture, toss gently to coat. Arrange the lettuce leaves on half of the bread slices. Spread the chicken mixture on the lettuce. Top with the remaining bread. Makes 4 servings.
