Nana's Stove
Are you ready for some good homecookin"?

 

Salmon Loaf

1 tablespoon of bread crumbs
1/4 teaspoon of paprika
1 cup of frozen green peas
1 can (16 ounces) of red salmon, drained and cleaned
1 can of mushrooms
1/2 cup of instant rice
2 eggs, slightly beaten
2 teaspoons of instant minced onion
1 teaspoon of dried parsley flakes
1/2 teaspoon of salt
1/4 teaspoon of pepper

Mix the bread crumbs and paprika. Grease a 8 x 5 inch loaf pan, coat with the crumb mixture. Place the peas in a 2 cup measure. Microwave on high for 1 to 2 minutes. Set aside. In a medium bowl, mix the salmon, mushrooms with liquid, rice, eggs, onion, parsley, salt and pepper. Gently stir in the peas. Press into the loaf pan. Microwave on medium (50%) for 12 to 18 minutes or until the center is firm. Rotating once or twice during the cooking. Let it stand for 5 minutes. Loosen the edges and invert onto a serving plate. Serves 4 to 6 hungry folks
