Stuffed Mushrooms Wrapped in Turkey Bacon

1/2 cup of diced onion
6 ounces of sliced smoked turkey bacon
Nonstick cooking spray
1/2 pound of fresh white mushrooms

Sauté the onion in a nonstick skillet sprayed with cooking spray for about 5 minutes or until translucent. Stir constantly so that the onion does not burn. Set aside. Cut each piece of  the turkey bacon in half about 3 to 4 inches long. Wash and dry the mushrooms and remove the stems from the caps by gently twisting them. Stuff the mushroom caps with some of the sautéed onion. Preheat the oven to 400ºF. Roll each piece of the turkey bacon around a mushroom cap and stick a toothpick in the center to hold them together while baking. Bake in a nonstick roasting pan for about 25 minutes or until the turkey bacon is evenly brown. Makes about 12 to 15
