| Nell's Chili Con Carne
2 tablespoons of vegetable oil 2 cups of diced onions 1 green bell pepper, seeded and chopped 3 cloves garlic, minced 2 pounds of lean, coarsely ground beef 2 cups of dried kidney beans, soaked overnight one 32 ounce jar of Newman's Own® Spaghetti sauce 2 to 3 cups of water 2 to 3 tablespoons of chili powder 1 teaspoon of ground cumin salt and black pepper one 8 3/4 ounces of whole kernel corn, drained sour cream and lime wedges, optional
Heat oil in Dutch oven over medium high heat. Add onions, bell pepper and garlic, cook and stir until vegetables are tender. Add beef, cook until browned. Add kidney beans, Newman's Own Spaghetti sauce, water, chili powder, cumin, salt, and black pepper to taste. Simmer, uncovered 1 hour, stirring frequently. Add celery and corn and simmer 1 hour. Garnish with sour cream and lime wedges, if desired. Makes 8 servings |
