one 12 - 14 pound goose 1 teaspoon of cracked black pepper 3 teaspoons of caraway seeds 2 teaspoons of salt 1 clove garlic Apple Prune Stuffing |

Rub the inside and out with garlic, then with mixture of salt, pepper and caraway seeds over inside of goose. Stuff with apple prune stuffing. Foold under wings and secure opening to keep tightly closed. Put in roasting pan and put in moderate oven 350ºF. for 3 1/2 hours. from time to time poke the skin and drain off fat. Skin should be deep brown and crisp and meat tender. Use drippings for pan gravy. |
